Mix together in large bowl:
3 cups flour
1 Tspn baking powder
1 cup sugar
1/2 tspn salt

Beat together in small bowl :
5 eggs
1/4 cup milk
1 tspn vanilla

Mix the dry and wet batches together by hand (or with a wooden spoon or spatula) until dough forms.
Heat some vegetable or canola oil. Form dough into small balls with your hands or with an ice cream scoop, then drop into the oil. Fry until golden brown.

Yam Fritters (Ojojo)

1 Small yam tuber ( or  4 large size sweet potatoes)
1 medium size onion (chopped)
Handful Fresh cilantro, chopped (optional)
Salt and dried pepper to taste
1/2 cup flour
2 large eggs
oil for frying

Cut and clean yam tuber, grate using a hand held grater
Remove any excess water from the grated yam
Add in egg, salt, onion,cilantro, pepper and flour
Mix together all ingredient
Set oil on medium heat,  add in the yam paste bits at a time.
Fry on each side for 5 mins or until golden brown.


Suya Chicken

8 chicken pieces
4 table spoons suya  spice mix
1 tspn salt
1 tspn garlic powder
2 cubes of maggi

  • Combine chicken with 2 Tspns of Suya mix, salt, garlic powder, magi and salt. rest in the fridge for 6-8 hours
  • Set oven to 375f, set the chicken on a tray and cook for 15mins
  • Remove the Chicken from the oven, add on the leftover suya spice and cook for another 15mins

Fish Sauce

4  large roma tomatoes
2 large bell peppers
2 habanero peppers
1 small  onion
2 maggi cubes
Small ginger
1 tsp sea salt
1/4 vegetable oil and 1/4 palm oil
1 large mackerel or tilapia (cut and clean)

  • Combine tomatoes, onion, bell pepper, ginger, and habanero pepper in a blender, Blend to a paste.
  •  Set blended pepper on high heat for 10mins ( this helps to reduce the water content)
  • In a different pot, combine the vegetable oil and palm oil. once the oil is hot, add in the parboiled pepper.
  • Add in salt, maggi and the cleaned fish. cover
  • Simmer on medium heat for 15 mins.
  • Serve on Rice or pasta

Tilapia Pepper soup

1 whole Cat Fish (cut and clean)
2 Tbspn Pepper soup Mix ( makes life easier, ingredient below if you will like to make your own)
1 Tspn oil of choice
1 cube Maggi
Salt (to taste)
Stock or water (1cup)
Utazi or bitter leaf (a pinch)
Chopped onions/ red pepper and scotch Bonnet (optional)


Place cleaned fish in a pot, add in some stock or water, set the pot on medium heat, Add in the pepper soup mix, salt, maggi,onion,pepper, oil and utazi

Cover and simmer for 25mins

When all else fail, MAKE A SANDWICH.
Hard boiled egg
jalapeno Pepper
2 slices of whole wheat bread
African dried chili

Mackerel in tomato sauce

I am a huge fish person, Mackerel is a great choice of fish for a quick sauce. you can never get it wrong.
Tip: Give a large Mackerel a quick rinse, pour in 500ml of tomato sauce, add in 2 tablespoons of oil, 1tsp of salt, a dash of soy(optional) ( any other choice of spice), add in some chicken stock or bullion cube. simmer on low heat for 15mins.

Fried Yellow Croaker

Perfect for soaked Garri.

Plantain Porridge

2 semi ripe plantains
2 ripe plantains
2 spoons palm oil
smoked fish (1 cup) *or your choice of protein*
1/2 tsp black pepper
salt to taste
1 bullion cube
1/2TSp Chili powder

  • Place a pot with 2 cups of water on medium heat
  • Cut plantain into chunks.... add to the water
  • Simmer for 12mins
  • Add in palm oil, fish, salt, chili and black pepper
  • Simmer for another 10mins, turning occasionally.
*serve as a side or main dish*
