Ingredient
- Fish ( Sockeye Salmon, cat fish, Trout, or whatever you fancy)
- 2 large red peppers
- 1 scotch bonnet
- 1 small onion
- Salt 1tsp
- Maggi (2cubes)
- A pinch thyme
- 1/2 ts spoon curry
- Basil (3 sprigs)
- 50/50 palm oil and groundnut oil (1/2 cup)
Preparation
- In a blender: combine pepper, scotch Bonnet & onion. Puree(be sure not to add lots of water, no water if possible)
- Set pot on high heat; add oil
- Add purred ingredients, add maggi, salt, curry and thyme
- Cover and simmer for 5mins
- Reduce heat to below medium (about 3)
- Add fish
- Cook for 30mins
- Taste for seasoning
- Finely chop basil, add to sauce
- Cover for another 5mins. serve on white rice.
