Coconut Fried Rice






Ingredient:


  • I 500ml tin Coconut Milk
  • 2 cups rice
  • 1-cup water or chicken stock
  • 2 seasoning cubes
  • 1tsp salt
  • A dash cardamom, allspice and nutmeg
  • 1 Tspn olive oil
  • Half white onion: chopped
  • ½ cup whole kernel corn
  • 1 large green pepper: chopped
  • Shrimps pre cooked (optional)

Direction

  • On medium heat, combine coconut milk and water.
  • Add in salt, cardamom, allspice, nutmeg, seasoning cubes and rice. Simmer until dried.
  • In a large skillet, add in oil, onion, green pepper and kernel corn. Stir continuously for 4 mins.
  • Add in already cooked rice, and shrimps. Taste for salt
  • Cook for another 2 mins.
  • Serve with Fish and Plantain

coconut rice & fried rice together?...wow! i had never thought of that combo...i would try it out, but would extract the coconut milk the manual way i know since the bottled ones sold here might had stayed long on the shelf. I would titus fish as supplement & meat.

p.s...please i don't know if it's only me that had noticed that frozen chicken, turkey & gizzard are getting more tasteless by the day?! no matter how i spice it up with curry, thyme, maggi & barley leaves, it just don't give me the desired taste! now i restrict myself to titus fish, cow meat & pomo!..my omi-obe do come out well! My family like it a lot with ewedu.

U need to try it, a little twist on 2 classics and it's heavenly!!!
@ tasteless frozen meat, well, i think most of the things coming into 9ja are very old products. if you can, Kill your own turkey, and chicken, spice, portion and freeze. it should be good for 12months.
supplementing fish in your diet is a good call, I am a huge fish person. depending on how i am making the fish, I have a couple of tested favorites.
anyways... have a superb week filled with great meals for ur family!!

lol@Koinonia... I love my seafood. I will move closer to the ocean just for fresh seafood. to think I almost stopped eating seafood at I watched "Finding Nemo" SMH..

I am so impressed with all the recipes and pictures...I would like to make fried rice and jollof for a party of about 50-75 guests...I guess that would be cooler size, please help me figure out how much of the rice and etcetera to measure.. Hi Anon: First off... thanks much for stopping by.

a cup of rice should feed 2 adults. so if you are looking to feed 75 guest, we are looking at about 37 cups of rice, you can pro rate all the other ingredients using the cups of rice. I.e ~ 18 500ml coconut milk, 37 seasoning cubes,18 Tablespoon olive oil E.T.C

I made this 3x last week. *Covering my face*

Natural fresh coconut (The beauty of living in Nigeria) replaced your coconut tin milk.I used prawns, green pepper and sweet corn the first two times then smoked catfish and sweetcorn the 3rd time. Yum yum

@ NG, perhaps you should consider changing your suppliers. My chicken is always tasty even without marinading

Nikkiii.....Coloring?? as in food coloring??? Biko why? lol.... hahahah.. I have never heard of coloring in rice ooo. sorry u are stuck with it :(
