Koinonia Ribs (home made Ribs)






Koinonia Ribs ( I am naming them after her because she requested the recipe) (request a recipe and I will name a dish after you!!. lol.)
Ingredient
1 rack beef or pork baby back ribs (cut into single ribs)
2 table spoons dry sherry (cooking wine)
1 teaspoon all spice powder
Salt to taste
Brown sugar (1tspon)
Honey (1tspn)
Ketchup (1 Tspn)
BBQ sauce (1Tspn) (optional)
½ garlic. ½ tspn ginger

Direction
In a small sauce pan mix together the sherry, garlic, salt and five-spice
Pour mixture into a bowl, Add the ribs, Combine. Leave to marinate overnight.
Place ribs on a foil-lined baking pan, and cover with foil
Bake ribs at 450°F for 60 minutes.
Remove ribs from oven, and discard top foil.
Drain liquids from baking pan, and turn ribs.
Combine the  honey, sugar BBQ sauce and ketchup (you need this to be Thick)
Baste the ribs generously
Return the ribs to the over, Bake ribs at 350°F for 15-30 minutes more, or until ribs are cooked through, basting several times with reserved marinade.
ENJOY!

I beg my sister, which one be rack beef? For my corner, na from baba rafiatu hand i dey buy meat nah all the flies don dance makossa put finish...biko what alternative do i have since pork meat is not sold in my area & i don't eat it. :)

Looking tantalizing as always..whenever i hear ribs, i usually visually the bony parts around the lungs when a goat or cow is killed...there is not much meat around it when butchered..so educate me please..tnx.

you are right, ribs is from the ribcage, in this part of the world, they cut it into usable pieces. not a lot of meat still, but very tasty. I am sure you will be able to find them in "fancier" supermarket in 9ja. I sure say the price go fit kill person sha ( even me self dey fear).

Looks finger licking good. I don't do swine so the beef is my thing. Usually I do my overnight in the over set a very low by morning its tender and lovingly delicious.

So I got home yesterday, put on my apron feeling all nice and cute with myself. Opened "my post" check, All Ingredients lined up on the table check. I started out mixing the ingredients with the ribs only for me to get to the 8hr marinade step. I almost cried :( I obviously couldn't make it before I dashed off to work this morning so it's a 24hr marinade for me
