Sauced Beans (Ewa)
I find it extremely hard to eat food without meat, and somehow I have never been able to wrap my head around pairing protein with beans, it just doesn't feel right to me. But since I am a strict "meatitarian" I served the beans with blackened salmon and cubed fried plantain. Enjoy!
Ingredients
Black eyed beans (2cups) * (Or Nigerian red beans ewa oloyin) 1medium onion( chopped)
Palm oil ( 4Tbs)
Dried pepper (1tsp) *(Or more depending on your heat level tolerance)
Maggi (2 cubes) (bouillon cube)
Salt (to taste)

*If you are soaking the beans prior to cooking, you will only have to cook it for 1hour30mins*
*Back home, we used blended pepper not dried pepper, I happen to fancy dried pepper better*
**For a healthy spin, substitute the palm oil for olive oil (save 320 calories, Grill or oven roast the plantain(save 120 calories) **

I am trying new substitutes now eg mushrooms ..........but it really is not the same :(((
I'm loving the dodo and salmon here!
I like the salmon but I'd replace the dodo with boiled Irish potatoes and for some reasons I don't like the black eyed beans,there's one called aluka beans,some people use it only for moi moi,I lovve that one.

lol, i feel the same way about beans and any other form of protein, doesn't feel right to me, i just feel beans has all the protein you need! lol. that said, i promised to never come here while at work, oh dear...i hear my tummy rumbling :(
I don't think any dish can beat beans and plantain. all the nutritional values in tact.. cabs, protein, iron, you name it.

i like beans porridge with soft plantain..some times with garri too. it looks yumm.haven't tried it with fish but have done chicken once

Used to like dodo a lot but cos of calories I stopped. I bless the Lord for making "food" ℓ☺ℓ

I don't know if that's how it is spelt but aluka beans is tiny and not as white as the normal one,it has its own sweetness and is best cooked with pressure pot cooz it doesn't get soft easily,it's this mama put or buka people that really use it coz they don't have to put too much spice or ingredient to it coz of its natural sweetness or sugry nature,also people that do moin moin,use it too.
