HomeMade ; Soymilk and Banana Bread




This is the first of a series of "home entertaining with ease" I will like to feature on occasion in the next little while.
I have here homemade soy milk and banana bread.

Soy milk

Ingredient
2 cups soy beans
sugar to taste


Banana Bread
Ingredient
3/4 cup sugar
1/2 cup butter, soft
3 bananas (ripe)
2 eggs
1 tsp baking soda, dissolved in 1 Tbsp cold water
2 cups flour
1 tsp baking powder
1/2 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg

Abacha



Ingredient
2 cups Abacha (dried Shredded cassava)
1 Dried Fish*
1/4 cup Palm Oil
1/2 teaspoon Akau
3 table spoons Crayfish
1/2 bulb onion
1/4 cup chopped scented leave
1 teaspoon iru (locust beans)
1 cube maggi and salt to taste

Ingredient
For the beans:
2 cups red beans
salt to taste
For the sauce:
1 large white onion (chopped)
1 cup palm oil
1tsp salt
1 cube maggi
1/4 cup dried blended crayfish
1 large roma tomatoes
1 large bell pepper
4 habanero peppers
another half size medium onion

Indomie Noodles (Recipe #1)


Ingredient

2 packets Indomie Noodles
4 raw colossal shrimps (large shrimps) *cleaned*
salt and pepper to taste
1/2 tspn dried basil 
4 Tspns stew if you have some or 4 Tspns spaghetti sauce
1 Tspn oil of choice

Direction
  • Add some salt, pepper and  basil to the shrimp. set aside.
  • Place a large sauce pan over medium heat, add in the oil. Once the oil is hot enough, add in the shrimps. cook on each side for 2-3mins. Remove the cooked shrimps and set aside. Add in the stew or sauce to the pot. Simmer on low heat while you cook your noodles
  • Cook your indomie noodles as instructed on the packet. Add your the cooked  indomie to the sauce. combine and simmer for another 2mins.
Serve your noodles with the shrimp. Enjoy!

Fish Curry



Ingredient
2 fillet of sermon (or your choice of fish)
1 tin low fat cream of mushroom or 1 cup plain yogurt
1 Tspn curry
2tsp oil
Dash Black pepper
Salt to taste
4 large Roma tomatoes (diced)
½ medium onion (chopped)

Directions
  • Place the fish on a tray, sprinkle both side with some salt and black pepper. Broil in the oven for 10mins.
  • Place a large sauce pan on medium heat, add in the oil. Wait for about two mins. Add in the chopped onions. Stir continuously for 2 mins. Add in the curry
  • Add in the cream of mushrooms THEN the tomatoes. stir
  • Add some salt to taste.
  • Pull apart the cooked fish and add that to the curry. 
  • Add some water if your prefer the sauce a little less creamy
  • Simmer on medium heat for 5mins.
Serve on rice.

Deep Fried Beans


 Deep Fried Black Eyed Beans (peas)*

Ingredient:
2 cups black eyed beans
Salt to taste
Oil for deep frying

Akara

Bean fritters 

Ingredient
2 cups black eyed beans
Small onion (chopped)
Salt (to taste)
2 eggs
1 large bell pepper and 1 habanera pepper
Oil for frying

Directions:

  • Soak the beans overnight, by adding the dried beans to a large bowl of water
  • Remove the bean husks by rubbing the beans together with the palm of your hands*
*Removing bean husk requires a high level of mastery, you can save yourself the hassle by buying already de-husked beans, at you local African store*
  • Once the beans are cleaned, remove any excess husk by repeatedly rinsing with water. What you should have left is white bean flesh
  • In a blender, combine the cleaned beans and peppers. Puree
                * Do no add excess water, you will need the beans to have a paste like consistency”
  • Combine the bean puree with the chopped onions and salt. Gently whisk in the eggs.
  • Take some time to mix the beans together with a spatula (you need it to be a bit fluffy)
  • Place a shallow pan with oil on medium heat
  • Once the oil is hot; with the cup of your hand or an ice cream scoop,  add in the bean paste to the oil bits at a time.
  • Fry a batch at a time until all of the paste is gone.
  • Serve with Ogi (akamu, eko) or garri.

Note: The shape of the akara is affected by your method of frying, if you shallow fry ( i.e in something like a frying pan without much oil) the akara will come out flat, If you deep fry ( a frying pan or pot with depth and enough oil) the akara will take on a round shape.

Assorted Rice Bowl





Ingredient:

  • 1 large bell pepper
  • 2 large tomatoes
  • 1 cup thai Basil (Nigerian Scented leave or Efirin)
  • 1 cube maggi (bullion cube)
  • 2 habanero pepper
  • ½ tspn salt
  • A dash of curry
  • ¼ cup palm oil (or ur choice of oil)
  • Meat* (pre-cooked)
Direction
  • In a blender, combine peppers, tomatoes and basil. Blend. do not add extra water to the mix
  • Set a pot on medium heat, once the pot is hot enough, add in the oil
  • Pour in the blended paste, cover for 5 mins.
  • Add in the pre-cooked meat, salt, maggi and curry
  • Cover & cook on medium heat for another 10mins.
  • Serve on white rice

*(for the meat, use whatever part you fancy; assorted meat generally describes the odd parts of  a cow i.e shaki (tripe), edo (Kidney), ponmo (skin), roundabout e.t.c) 
for this recipe I used shrimp, shaki (tripe) and beef kidney.

*be sure to buy a really strong smelling basil,  it gives gives the sauce a totally different taste and aroma.

Steamed Groundnut (Epa)


I found raw groundnut at the frozen food section of our local Asian market.  SALTED & STEAMED.

HomMade Fish and Chips


Salt & Pepper seasoned Oven Broiled Tilapia with Chips
Ingredient:

1 medium size whole tilapia ( de-scaled and cleaned)
A tspn sea salt
A tspn black pepper
A pinch dried parsley flakes (optional)

Direction

With a knife, cut into the fish horizontally on both sides
Rub in the salt, black pepper  and parsley flakes
Set aside for 10mins
Turn the oven on to Broil (usually the highest setting on most ovens)
Line a clean oven tray with foil pepper, set the fish on the tray
Place in the oven & broil for 15mins
Enjoy
#Note, I usually don’t fry my fries. As pictured above, the fries is oven baked. Takes about 10mins @350f depending on the cut
