Wara ( Tofu)


I spent a great part of my early childhood in Kwara and this was a staple. You could find it in any street corner , some people call it "Wara soya" others call it "Beske" or Tofu. This is a very healthy and tasty snack made from soy beans.

Ingredient
21/2 cups soybeans
1/4 cup freshly squeezed lime juice
water
Other ( Flour for breading, salt and pepper to taste, oil for frying)

Direction
  • Soak the soybeans overnight. Drain and grind in a blender ( add about 3 cups of water while grinding)
  • Strain soybeans through a cheese clothe or sieve
  • Pour the sieved milk into a big sized Pot, Boil the soy-milk on medium heat for 45mins to 1hr, stirring frequently( be careful, the milk has a tendency to boil over)
  • Reduce the heat, add in lime juice (do not stir), tofu should start to form. turn off the heat, cover the pot, set aside for 1hr
  • line a straining pan (colander) with cheese cloth, place in a sink, pour the tofu in carefully, fold the cheesecloth over
  • place colander over a pot, place a plate on top, put a heavy object or a gallon of water on the plate.
  • leave for 4-5 hrs. Your tofu should be set and ready to serve.
**Tofu is ready for consumption at this point, you can season it with salt and pepper and serve** or process further;
    • Cut the tofu into desired sizes, season with some salt and black pepper, season your flour with some salt, coat the Tofu with the flour. place the oil on medium heat, fry Tofu until golden brown in hot oil.
    Serve with a side of plum sauce or ketchup.

    Ribbon Fish





    My motive for this was to present 1 protein in 3 different combinations. The first(2) is simply fried fish which is awesome to soaked garri. Second(2) is served with a salsa of onion, plum tomato and fresh Basil and the third is simply option 2 on rice. Bottom line is .... the excitement of food lies in the way it's combined.

    Caramelized Goat


    I guess I need to start by saying this sauce should be served on rice or pasta, It's not meant to be eaten alone.

    Ingredient
    10 pieces goat meat (washed)
    2 large onions
    4 cubes maggi
    1/2 cup oil  ( peanut or palm oil)
    salt to taste
    1/2 tspn ( black pepper, curry, cumin, garlic, ginger)
    1 Tspn dried chilli pepper
    2 large tomatoes
    2 large bell pepper(tatashe)
    2 habanera pepper
    salt to taste

      Ogbono (Apon)

      This is by far the fastest soup to make.


      Ingredient
      1/3 cup dried/bleneded apon/ogono
      1/4 cup palm oil
      2 cups water
      Choice or meat and fish (precooked)
      2 cubes Knor ( bullion cubes)
      salt to taste
      1 Tspn dried pepper
      3 Tspns blended crayfish

        HomeMade Chinese ( Chicken in Black bean)


        Chicken in Black Bean Sauce

        Ingredient
        2 tablespoons peanut oil
        4 full size chicken breast,sliced
        1 tsp corn meal
        1 crown of fresh broccoli
        1 piece ginger, minced
        1 each Red/yellow/green  Bell pepper ( cubed)
        1/4 teaspoon hot chili oil or ground pepper
        2 tablespoons fermented black beans, rinsed
        2 tablespoons soy sauce
        1 tablespoon water
        2 bullion cubes or 1/4 cup chicken stock

        Direction
        • In a bowl. add in the sliced chicken, 1 bullion cube, a dash of salt and the cornmeal, mix. Set aside while you prep the vegetables
        • In a wok or sauce pan on medium heat, heat peanut oil until it starts to smoke. Add the chicken and cook, stirring until both sides begin to brown, about 3 minutes. Remove the chicken and drain of kitchen towel
        • Add a little more oil to the pan, then add in all the vegetables; stir-fry for another minute. Add fermented black bean. Stir in soy sauce, water, and bullion cube. Add in the chicken, Simmer until sauce is slightly thickened, about 2 minutes.  Serve immediately with white rice.

        Chicken Curry

        Chicken Curry & Naan bread


        This is a true Indian infusion;Fast , easy and autentic
        Ingredient;
        2 pieces skinless, boneless chicken breast ( cut) (seasoned with some salt and pepper)
        1 tin low fat cream of mushroom or 1 cup plain yogurt
        1 Tspn curry
        2tsp oil
        dash Black pepper
        Salt to taste
        1/2  tspn parts ( cumin,  clove, cardamon, paprika)
        ½ medium onion (chopped)
        handful chopped cilantro (optional)

        Direction
        • Place a large sauce pan on medium heat, add in the oil. Wait for about two minutes. Add in the chopped onions, stir continuously for 2 mins. Add in the curry

        •  Add in the chicken, satay until cooked (4-5mins)
        • Add in the cream of mushrooms , stir

        • Add in the  cumin,  clove, cardamon and paprika
        • Add some salt to taste
        • Add some water if your prefer the sauce a little less creamy
        • Simmer on medium heat for 5mins. add in the chopped cilantro
        Serve with rice or naan bread.

        Coco Yam


        Fried Coco-yam with Jalapeno Fish Spread

        Does anyone here like coco yam? how  do you like it prepared?. My grandpa had acres of cocoyam at the back of his house, both the Ghanaian variety and the little Nigerian variety so we got very creative with it growing up.Anyway, here is my take on a classic tuber :)

        Ingredient
        1 tuber coco yam ( peeled, washed, cut and salted)
        oil for frying ( for a healthy spin, oven baked the yam instead)
        The spread
        1 medium size fish ( any kind, I used salmon Mackerel is divine)
        2 medium size Jalapeno pepper or green Habanero (chopped)
        1 small tin tomato puree
        1 small onion (chopped)
        salt and maggi to taste
